Our farm is designed and established to produce our coffee with friendly practices encouraging the environment, protecting wildlife and soil microorganisms. Our quality depends on our staff and management. We have local employees trained in quality control along with environmental, safety, and organic standards for each and every process. 


The average consumer doesn’t usually know the extent of what goes into manifesting the perfect cup of coffee, but no worries; that’s why we’re here. As coffee producers heavily invested in the quality of health, taste and ethics, we believe that it is our responsibility to provide the consumer with a better understanding of the efforts that go into crafting our proud 100% organic Honduran coffee.  Our water source comes entirely from the natural springs located on our estate. We have perfected our irrigation system so that the PH level of the water is ideal for dispersing across all of our 64,000 coffee plants.

On our land we have a bee farm that is responsible for pollinating our coffee plants which helps naturally increase the volume and quality of our cherries.

We plant our seeds in a bed under shade to block direct sunlight which serves as protection and rids of the need for chemical fertilizers and pesticides.

We selectively pick our cherries 1 by 1 from November to January. We truly believe that coffee plants thrive with positive energy so we make sure that everyone who comes in contact with the them is happy with a positive attitude.

While most farmers use a single to double wash system after cherries are picked, we take the extra stride to ensure only the best picked cherries are used by implementing a triple wash system.

When de-pulping the cherries, our machine helps us by transferring the successfully de-pulped cherries to the exit. After all the cherries have made it through, we inspect each cherry and de-pulp the rest by hand if all of the pulp has not been removed.

Our drying process involves two steps. First the beans are placed in direct sun light and rotated until they reach about 35% humidity. They are then transferred to our solar drying area until they reach 11.5 % humidity.

We remove our husk which is the white outer layer of the raw bean more commonly known as a green bean. This machine is responsible for doing so and any leftover parchment is removed by hand and wind.

When sorting our beans we meticulously inspect every bean looking for any defect (discolor, size, cracks, unhusked). Any batch that has more than 6.5 % of defected beans is completely removed and assessed.

We roast all of our beans in small batches to ensure that they all receive special attention. This enables our coffee to have a consistent quality.

We grind our coffee very fine to help preserve quality of flavor and longevity.  With finely ground coffee you'll be able to use less grounds to reach your desired taste.
